La Fabbrica della Pasta Linguine e Palumm 60 cm – 500 gr.
The microclimate of the Monti Lattari mountain has the ideal mix between wind, sun and humidity for the wheat necks of our Linguine e Palummo Gragnano. Since 2013, all Gragnano pasta has the European IGP label, which guarantees the high-quality Gragnano pasta preparation.
Linguine means ‘Little Tongues’. This paste has the length (60 cm) and thickness of Spaghetti, but is similar in shape to Fettuccine. These are flat instead of round.
The Linguine e Palummo Gragnano is a narrow, flat ribbon paste made of durum wheat flour. The ribbon paste is 60 cm long. It is slightly porous so that the sauce can absorb to the maximum. The taste is exactly as you expect from a good pasta, full and firm.
Prepare the Linguine e Palummo Gragnano with radicchio, garlic and Parmesan cheese. If necessary, bake some pancetta.

Pasta has been produced in Gragnano for over 500 years.
Producing pasta for us is an art we perform every day, following the same traditions as our ancestors. A unique mix of history, culture, traditions and of course… secrets!
Our ancestors mixed only 2 ingredients, high quality durum semolina and water from the natural spring in the mountains of Gragnano. The ingredients were then pressed through a bronze die and the pasta was dried in the streets of the city, under the sun!
Now, after all these generations, we follow exactly the same traditional methods!
