Gragnano is located at the foot of the Monti Lattari and benefits from a microclimate of the right mix of wind, sun and humidity. It was for this reason that the King of Naples decided in the 18thcentury that only two places were suitable to grow the wheat for the rest of the population: Naples and Gragnano (IGP stands for a “guaranteed regional product”). The durum wheat also had to be mixed with the low-calcium spring water of the Monti Lattari.
The half paccheri Miez Paccheri rigati IGP is the delicious product of this traditional preparation method. By letting the paste dry at low temperature for a long time, it gets its delicious bite. The large, tubular pasta holds the sauce to the maximum.
The paccheri Miez Paccheri rigati IGP is especially tasty when you fill it with a hearty meat or fish sauce. A vegetarian filling of spinach, ricotta, mozzarella and tomato sauce is of course also delicious.
